Sorbet is a frozen dessert made from fruit puree and sweetener. Sorbet is lower in fat than other desserts because it contains no milk or cream (which makes it different than gelato or ice cream). The recipe for sorbet contains only fruits, sugar and sweetener. The fruit puree is frozen after the sugar is incorporated in it, however restaurants use professional ice-cream machines to slowly cool it down.
Sorbets can be prepared with a wide range of variations especially because almost any fruits can be used in the process. Pomegranates, melons, lemons or even apples can be turned into a puree for sorbet. Some sources indicate that sorbet originated before 1000 A.C. Back then it was a mix between ice and fruits, however records indicate that the first reference to sorbet came from the Ancient Romans.
